Everyone LOVED the food and the service that you provided for The Imaging Center's summer picnic. There was more than enough food and selection to satisfy everyone and the set-up, service, and clean-up were great! We will definitely keep you a the top of our list for next year's picnic.

Beach Party

When I saw these plates in the Oriental Trading catalog, it made me think how lovely they would look with a nice pile of barbecued pork on top and a beer beside them.  Then, who’d care if there was any sand around?

For the really creative, attach an invitation to the fan and mail them in big envelopes.

Mark & Maggie Finally Wed at Ellis Ranch in Loveland

When a bride and groom choose you to cater their wedding almost a year in advance of their date, you know two things.  1)  This is the world’s most organized bride (or groom?).  2.)  Organized couples have more fun at their wedding.  Just look how relaxed Mark and Maggie look as they come through the buffet line.

I do believe there are TWO buns on Mark’s plate.  This is one groom who didn’t go hungry at his wedding.

Maggie and Mark chose added a colorful garden salad for their guests from our barbecue meal.  We used silver, white and clear serving pieces to go with the more formal nature of their event.  This couple chose clear plastic plates and forks (included in our prices for weddings) rather than real china.  I think it works great–we don’t want any couples to have flimsy paper or foam plates at their wedding.

Wouldn’t you like to look this relaxed on your wedding day.  We’ve catered many more wedding than most people will attend in their lifetimes, and we’ve noticed planning ahead really does make for relaxed, wedding day bliss.

Can I just say?  What a classy gown.  The bridesmaids wore very tasteful deep yellow dresses.  Mark wore a three piece suit.  Really a very put-together wedding.

Marshall Miller took these casual snaps of the dining couple.

Ellis Ranch Wedding Show How We Worry

When we commit to coming to a wedding show like the one at Ellis Ranch Event Center in Loveland (between Loveland and Estes Park) we sign up and then start worrying about it weeks in advance.

We worry we won’t get the exact spot we want so we get up at the crack of dawn to try to be the first ones at the Event Center.  That sometimes means bringing along our littlest helper.  While mom arranges and rearranges the table settings, she lines up every “diamond” in a row.  See the fine job she did arranging the bling?

We fret over which appetizers to bring and decide on a pretty selection of popular appetizers for cocktail hours…smoked meat platters, vegetable and dip platters, fruit kabobs, cheese and cracker displays.  We never worry about the meat…barbecue and lots of it.

We worry that the mini-cheescakes won’t really let people know that we offer Add Your Own Topping Cheesecake Bars.  (The most asked about item on our Appetizer Menu.)

We worry that the silver isn’t shiny enough so we polish it.

We worry we won’t have enough menus, enough help, enough interest.  We worry brides won’t know the pennants are just for show and that they get to add their own details.  We worry that no one will come to the party.

We notice a tiny smudge on a chafing dish, so we polish all the silver again.

We light the candles (in the romantic light at Ellis Ranch candles are a must.) We worry that we didn’t bring enough candles.

Then the show opens.  A bride named Ashley grabs a fruit kabob (skewered on a very cute heart bamboo pick) and exclaims to her mother, “I want these at my wedding.”  Ah,  all that worry was worth it!

How to Plan a Luau in Northern Colorado

No place is too far from the tropics to celebrate luau style!  If I wanted to throw a really fun party for a customer appreciation day, school year-end party, employee picnic, or super-memorable wedding, I’d start by booking a private island.

Tell Your Friends You Have a Private Island

Did you know you could rent an island in Fort Collins for your party?  You can rent an island from Island Lake Marine and Sports.  Imagine greeting all your guests as they disembark from the speed boat that brought them across the lagoon!

The Island has pavilions, serving tables, picnic tables, gas grills, volleyball courts, horseshoe pits, fire pits (and firewood!), water trampolines, canoes and paddle boats.  Best of all, Albert Pit Barbecue is a Preferred Caterer at The Island.

Party Island Barbecue Sauce

Our visit to the Island that will be the site of your party inspired us to create a BBQ sauce that mimics the inviting warmth of the Tropics.  We precisely mix a blend of pineapple, brown sugar, and tropical spices to make Party Island Barbecue Sauce.  The sauce compliments our hickory-smoked meats.  But you can only get it on the Island…we won’t serve it anywhere else!

Message in a Bottle Invitations

12 Personalized Island Hibiscus Bottle Labels Once your private island is booked, slip a map to the island inside one of these customizable Message in a Bottle product from Orientaltrading.com.

Recommended Luau Menu

If it was our party this is what we would serve on the Island… Kalua Pork, of course!

  • Smoky, shredded Pork Sandwiches on fresh bakery buns
  • Party Island Barbecue Sauce–Our blend of pineapple, brown sugar and tropical spices make a made-from-scratch sauce that we serve no where else but on the Island
  • Macaroni Salad–a classic luau side dish
  • Fresh fruit
  • Chips because something about a beach requires chips.
  • Pineapple Upside-Down Cake

Email us to get a proposal for this menu.

Summer Party Grill Menu

Perhaps you’d prefer that we bring hot dogs, brats and hamburgers and grill them up on site.  Check out our Grill Menu.

  • Hamburgers/Cheeseburgers
  • All Beef Hot Dogs
  • Veggie Burgers or Turkey Burgers
  • Potato Salad
  • Baked Beans
  • Potato Chips
  • Fudge Brownies
  • Deluxe condiments

Then email us to get a proposal for this menu and ask us about adding pineapple slices to the menu to top the burgers.  We’ll be glad to send the staff to schlep all the items to the Island, cook them to perfection, serve them to your guests, and carry all the mess out!

Cool Drinks for your Hawaiian Escape

  • Fruit punch
  • Lemonade
  • Iced Tea
  • Sodas and Bottled Water
  • Margarita Machine (we can bring that, too.)  In fact, if you call your liquor order in, we’d be glad to pick it up, chill it, and deliver it for you.

Party Details

Everything that you take to the Island has to be schlepped in and out by boat so I’d only bring the essentials.  Still, I’d want to have a few niceties for my guests who come a little less prepared.

  • Leis to greet each passenger as them disembark
  • Sunscreen
  • Bug spray

Let’s Get This Party Started!

No one will forget this party! And if you have it catered, you’ll have a good time, too!

Everybody’s HOME: Anniversary Parties in Fort Collins

Let’s face it parties can be exhausting!

Anniversary parties are great fun.  But they can be exhausting, too.  If you and your siblings (and their families) are all here in Fort Collins, Loveland, Greeley or Cheyenne to celebrate your parent’s Anniversary, don’t forget how tired you are all going to be after the party.

We, of course, will be glad to bring a nice barbecue meal for your guests at the party.  But after it is all over, either that night, or the next day for lunch, you are all going to want something easy. Wouldn’t a ready-to-heat homemade lasagna, a big salad and breadsticks be just right the thing? And imagine, your mom won’t have to cook at all!

Just ask and we’ll assemble our special lasagne for you, salad and breadsticks.   We can add this to any catering order and leave it behind for you to enjoy over the weekend.

Mom, Enjoy the Graduation Party and Stay Out of the Kitchen

When our oldest and only school-age daughter gets home from school she has the same ritual…she drops her backpack in the middle of the floor where everyone will trip over it for the next two hours (and literally just inches away from the hook where it should be hung), and then she heads into the kitchen. And, guess what? I am always in the kitchen when she gets home, it fact I spend most of my day there while Korey is off smoking the barbecue. It just feels like home base to me and I bet it it where it is the room where most moms spend most of their “at-home” time.

At Albert Pit Barbecue we love that women and men are cooking for their families but we want to make one change to the way things are in the world. And that is that when Northern Colorado Moms have kids graduate we want them to take that one day off from being in the kitchen and fully attend the celebration of their family’s accomplishment…by having their graduation celebration catered.

Mom, it really is OK to spend a little money and have your event catered.

You’ve done all that work getting the house and the yard ready, found the pictures for the senior posters, invited the relatives, and fund something for everyone to wear. Not to mention being one of the first, if not the first, person to love the graduate, the child’s first teacher, the child’s primary care-giver…it really is OK to order in some barbecue. You don’t want to miss overhearing all the great things people are going to say about your above-average child. You don’t want to miss all the hugs. And most of all when people ask you what you are going to do now that your child has graduated you don’t want the answer to be “do the dishes.”

Cutest Cupcakes for Catered Graduations

Isn’t it disappointing when you see a cupcake that is so lovely looking that it is irresistible but when you take a bite it has all the flavor of…of…well, of nothing.

Big box stores should not be able to get away with selling those things!  Last year I noticed a lot of just those very cupcakes on the graduation buffet tables. People had dared to put them right beside the delicious barbecue we had worked hours to prepare.  Shocking!

So this year, we’ve taken matters into our own hands.

I think the formal black and white will look great against your school-colored tablecloth.  I can make them in a school color, too.

Vanilla, Chocolate, Lemon

Book your graduation party today at 970-213-7427.  We are delivering most orders for free in Fort Collins.  We usually fully book graduation weekends and we want to be sure to get your event in early.

Is it wrong to love a tablecloth?

Sometimes I see something so brilliant I wish I’d thought of it myself (and reaped the imagined pile of money that certainly must come from the idea.  Thus, I introduce you to this durable plastic table cover that fits tables like a bed sheet.

Never again will you have to struggle with taping plastic to tables.  We stock these in a variety of colors.  Just tell us your table size and color preference and we’ll add them to your catering order for a very reasonable cost.

First Friday BBQ Carryout

It only happens once a month…and it’s happens on the First Friday of each month.  Our catering customers kept requesting it so now Albert Pit Barbecue offers carryout BBQ on the First Friday of the month from 4:00-7:00!   Be your family’s hero by picking up some great barbecue on your way home from work.

We are busy the rest of the month catering corporate lunches, company picnics, family reunions and weddings—so this is your once-a-month chance to get carryout of our hickory smoked brisket, hand-pulled pork, chicken and ribs along with tangy slaw, beans, creamy potato salad and Fat Albert barbecue sauce.

Prices start at $8.99 a plate (1 meat and 2 sides).  We have meat by the pound, and side dishes by the pint and quart.  (Rib racks sell pretty swiftly!)  I love to think of all those Albert Pit Barbecue ribs being eaten by families in front of a Friday Night Movie with a beer–for the adults only, of course.

Sign up for our newsletter (usually one email  a month but no more than three) I’d be glad to send you an email reminder and a map to our catering kitchen.
